Why Fine or Sheet thermocouple is superior?

Small contact area, then transferred little heat spread to big ball (large heat capacity). Moreover heat runaway through big (e.x. 200 micron) wire section area. Very low response Small contact area, but transferred little heat spread to minimal tip (little heat capacity). Moreover heat don't run away due to small (e.g.25micron) wire. (section area is only 1/64) Heat runaway through big (e.g. 200 micron) wire section area, but transferred heat quantity is several thousand times larger than conventional thermocouple due to large contact area.
Experiment method

We fixed various thermocouple on stainless pot (at same height) using caption tape.
Then we poured hot water .
